These meatballs are good on a sandwich, on top of pasta, on a salad, or by themselves. I love them with tomato sauce or pesto on a bed of pasta with some cherry tomatoes and parmesan cheese.
These freeze wonderfully. Freeze the leftovers for another day or double the recipe and use the second batch as a meal for a rainy day when you don’t feel like cooking. I like to reheat mine in the air fryer.
I have been trying to cook meals that use eggs because I currently have 14 dozen. I am super thankful for the abundance of quality food, but I’m running out of egg cartons, and I don’t want them to go bad before I can use them. That’s why I’m trying to come up with egg heavy recipes. Meals for dinner including them has been kind of challenging. Even though these meatballs only use one egg, I’m just glad they don’t taste like eggs but still helps me consume them. I haven’t had much luck selling them since we live in an area where most people have their own chickens. Oh well, it’s not a bad problem to have!

- Ground Pork
- Egg
- Breadcrumbs
- Greek Freak Seasoning
Instructions
- Preheat the oven to 400 degrees and line a baking sheet pan with parchment paper.
- Combine the ground pork, egg, breadcrumbs, and Greek Freaking Seasoning. Use your hands to mix together. Mix until just combined.
- Using a 1 1/2 tablespoon cookie scoop, portion out the meatballs. Then roll them into a ball.
- Bake for 20 minutes and then broil on hi for 4 minutes.
- Serve on top of a bowl of pasta dressed in pesto and tomatoes.
