This mango salsa is the perfect combination of sweet and salty. It adds so much flavor to tacos or delicious by itself with some chips!
This mango salsa is super quick and easy to make. It has quickly become a new family favorite.
When I made this, we put it on top of chopped brisket tostadas. It was crazy good. The sweetness of the mango complimented the savory meat really well. The texture combination was also super delicious. The creamy avocado and the soft tomato and mango with the crunchy tostada shell was a perfect match. Plus, it added so much color it made is so appealing looking.
Right now, mangos, tomatoes, and avocadoes are in season. I had not had a mango in a long time and the ones I got from the store did not disappoint. It is hard to beat a perfectly ripe mango. I wish we could grow mangos here because I would have multiple trees. We stocked up on all the fruit trees that will grow here though! We ended up getting 3 pears, 2 peach, 2 apple, 2 plum, and 1 fig tree. Hopefully they will be super fruitful here in a couple of years.
For this recipe I like to use avocadoes that are just on the side of almost ripe. When you are dicing them and stirring them in with the other ingredients, they hold their shape a lot better this way. I like to store my avocadoes and mangos in the refrigerator directly from the store and then I pull them out the day before I want to use them.
