This would be perfect for a potluck or a birthday party as the birthday cake or as an extra dessert. It makes a 9 x 13 pan, so it is easy to cut the pieces as big or small as you would like. Top it with some colorful sprinkles to add a pop of color to it to make it even more fun and customized!

There are some substitutions you could use in this. You can use any kind of Chex cereal instead of the rice. You can also use a different flavor of ice cream and chopped almonds or pecans instead. Make it how you like or ingredients you have on hand!

- Rice Chex Cereal
- Shredded Coconut
- Slivered Almonds
- Brown Sugar
- Butter
Instructions
- Let the ice cream sit out so it is easy to work with.
- Mix together the rice Chex cereal, brown sugar, coconut, and almonds.
- Melt the butter and stir it into the mixture.
- Put half of the Chex mixture in the bottom of a 9×13 pan. Add the softened ice cream on top of it. Top with the remaining Chex mixture.
- Freeze until ice cream has hardened.

- 1 C Shredded Coconut
- 1 C Slivered Almonds
- 1/2 Gallon Vanilla Ice Cream
