This creamy orange jello salad has the best texture and flavor. The fruity flavors from the jello and oranges mixed with the creamy cool whip and pudding, topped off with the tapioca pearls makes for the best bite!

This is the perfect potluck dish. It is super family friendly and something I don’t think many have tried. Make it the day before and then all you have to do is remember to take it with you when you leave. Honestly, that’s the hardest part!
You could serve this for dessert or as a side dish. If you need more than one pans worth you could easily double this recipe as well.
I plan to make this for our Easter potluck at church. The pretty orange color of this just screams spring to me. Plus, the bright, fruity flavor of it just seems like the perfect dish to celebrate Easter. Would also be great for Mother’s Day, and the Fourth of July.

Ingredients
- Orange Jello Packet
- Cook and Serve Vanilla Pudding Packet
- Minute Tapioca
- Water
- Canned Mandarin Oranges in Light Syrup
- Cool Whip
Instructions
- In a saucepan, bring the water to a boil. Add in the orange jello packet and the vanilla pudding packet. Reduce to a slow boil and stir consistently for 2 minutes.
- Add in the tapioca. Continue with a slow boil and stir for 3 minutes.
- Remove from the heat and transfer to a mixing bowl to cool completely.
- Once completely cooled, use a hand mixer to gently beat in the cool whip until just combined.
- Strain the canned mandarin oranges. Gently fold into the salad with a spatula.
- Transfer to an 8.5 X 11 baking dish. Smooth out into an even layer. Cover with plastic wrap and refrigerate overnight.

- 3 Tbsp Minute Tapioca
- 2 Cups Water
- 15 Ounce Canned Mandarin Oranges in Light Syrup
- 1 C Cool Whip

If you don't have time refrigerate overnight, try to keep it in the refrigerator for at least 6 hours.
