Make a healthy but tasty lunch with these egg salad sandwiches. They are easy to make and customizable to fit anyone’s tastes.
Egg salad sandwiches were one of my favorites when I worked at a sandwich shop in high school. Over the years I worked there I saw hundreds of different combinations of ingredients on this sandwich. Many put cheese on it, jalapenos, or just plain.
This is a great meal prep option. Prepare a batch or two of the egg salad and have sandwiches or salads for lunch all week long for a healthy but filling and delicious meal.
You can make this into a gluten free option and put the egg salad on a bed of lettuce with all the same toppings and dress it with the Italian dressing and it is equally delicious!
If you don’t have an air fryer you can always hard boil eggs the traditional way, I just prefer the air fryer because it is easier, less dishes, and less hands on in my opinion.
Ingredients
- Eggs
- Mayonnaise
- Mustard
- Salt
- Pepper
- Buns
- Red Onion
- Lettuce
- Tomatoes
- Italian Dressing
- Pickled Banana Peppers
Instructions
- Hard boil your eggs in the air fryer. Set it to 270 degrees for 15 minutes. Once done cooking put in an ice bath for about 10 minutes or until cool enough to touch.
- Peel the eggs.
- Put the peeled eggs in a bowl and using a knife, roughly cut them into smaller pieces.
- Add the mayonnaise, mustard, salt, and pepper to the eggs. Gently stir until well combined.
- You can serve immediately or refrigerate for an hour or two so the mixture gets cold.
- Cut the bun in half. Top with 4 tablespoons of egg salad, lettuce, red onion, banana peppers, tomatoes, and a splash of Italian dressing.

- 1/4 Tsp Pepper
- 1/4 Tsp Salt
- 5 Buns
- Romaine Lettuce
- Red Onion

- Cherry Tomatoes
- Italian Dressing
