Bell peppers are my favorite vegetable to dehydrate because of the beautiful seasoning powder they make. The flavor of the pepper is so intensified in the dehydrating process. It is so good on top of protein, in soups and stews, and dips.
Dehydrating is a great option when you have already frozen as many bell peppers as you will need before the next growing season. The final product takes up way less space, especially when made into a powder. If you garden has a crazy number of peppers, I would highly recommend turning the majority of them into that powder. It will keep for years, and it takes a lot of peppers to make a small amount.
Dehydrating is such an easy process. The prep work is minimal, and the results are so versatile. I like to start the process in the evenings because then they are finished dehydrating when I wake up in the morning.

Instructions
- Wash and thoroughly dry the bell peppers.
- Remove the stem and seeds.
- Slice into strips and then dice.
- Arrange pepper dices on the dehydrator trays so they aren’t touching on any sides.
- Place trays in dehydrator and set temperature to 140 degrees for 14 hours.
- Once they have completed dehydrating, store them in an airtight container, or grind up into a seasoning and then store in an airtight container.
