Italian sausage and vegetables roasted in the oven on one sheet pan for an easy and mess free meal!
Sheet pan meals are such a great option when you want to make a healthy meal but without all the effort. This makes hardly any dishes and a great way to make vegetables taste kid friendly.
You can use any vegetables you have on hand. Just make them like sized shapes so that they cook evenly.
The seasoning I used on the vegetables I found at TJMAXX. The brand is Distance Harbour Spice Merchants. You can also get it on Amazon. It is so good on any vegetable. I highly recommend it!
Serve this over a bed of rice, eat as is, or over some noodles, you can’t go wrong!
Ingredients
- Italian Sausage Links
- Sweet Potato
- Yellow Onion
- Mini Sweet Peppers
- Baby Carrots
- Roasted Vegetables and Fries Plus Seasoning
- Olive Oil
Instructions
- Preheat the oven to 400 degrees and set out an 18 x 13 sheet pan.
- Peel and chop the sweet potato into 1/2-inch cubes. Put on the sheet pan.
- Peel and chop the onion into 1-inch pieces. Put on the sheet pan.
- Remove the stems and seeds from the mini sweet peppers and chops into 1-inch pieces. Put on the sheet pan.
- Measure out 2 cups of baby carrots and put them on the sheet pan.
- Drizzle the olive oil over the vegetables.
- Add the seasoning over the vegetables. Toss the vegetables well until the olive oil and seasoning cover them evenly.
- Slice the Italian sausage into 1-inch-thick coins. Put them on the sheet pan.
- Bake for 20 minutes and then stir everything on the pan and then bake for 15 more minutes.
- Serve as is, over a bed of rice, or over noodles.
