These cookies taste like spring or summer time. The strawberries add a nice burst of freshness and compliment the lemon cake flavor wonderfully. They are a great afternoon snack that everyone of all ages will love!
Boxed cake mix cookies are one of my favorite hacks. It makes such delicious cookies that take so little effort to make and time. You can literally turn any flavor of cake mix into cookies. I have started grabbing lots of different flavors when they go on sale to have on hand.
If you don’t have strawberries, you could do another kind of fruit like raspberries or blueberries. I would use whatever is in season. It is strawberry season at the moment so I’m trying to incorporate them into anything I can think of because they are so tasty at the moment. - Boxed Lemon Cake Mix
- Vegetable Oil
- Eggs
- Strawberries
Instructions
- Preheat the oven to 350 degrees. Line two sheet pans with parchment paper and set aside.
- Combine the boxed lemon cake mix, vegetable oil, and eggs. Mix until well combined.
- Finely chop the strawberries. Mix them gently into the batter.
- Using a 1 1/2 tablespoon cookie scoop, scoop out the batter into 24 cookies evenly spaced between the two sheet pans.
- Bake for 14 minutes or until the cookies don’t look shiny anymore.
- Let rest on the pan for 10 minutes before transferring to a cooling rack.
- Store in an airtight container.

- 1/2 C Vegetable Oil
- 1 C Strawberries

Notes
Make sure you don't underbake these. They will fall apart on you.
Because of the fresh strawberries, these are best eaten within the first day or two.
