This whole chicken is glazed with spicy pear jalapeno jelly that gives the most delicious, sweet and spicy flavor.
My mom made the spicy pear jalapeno jelly. She’s fantastic at canning stuff but I would say she is most known for her jalapeno jelly’s. She makes all kind of flavors like raspberry, blueberry, pineapple, spicy pear, and just plain jalapeno jelly. They are all fantastic. Hopefully I can get her to share her recipes with me so I can share with you guys!
The sugars in the jelly caramelize during the grilling process giving the chicken the most amazing crust on the chicken skin. I cooked it on a Big Green Egg which also adds some smokiness to the bird which also adds another level of flavor that is delicious with the jelly. The big Green Egg makes it so easy to cook large pieces of meat on. If you don’t have one, I highly recommend getting one. They can totally replace an oven. The temperature is easy to control and the quality of the food we cook on it is incredible!
This chicken would pair great with Air Fryer Sweet Potatoes and Cherry Tomato Salsa as an appetizer.
Ingredients
- Whole Chicken
- Salt
- Spicy Pear Jalapeno Jelly
Instructions
- Preheat grill to 375 degrees.
- Pat whole chicken down with a paper towel. Lay it back side up, and spatchcock it.
- Sprinkle the salt on both sides of the bird.
- Melt the spicy pear jalapeno jelly in the microwave for 30 seconds.
- Using a brush, brush the jelly all over the bird.
- Place the bird back side down on the grill. Cook for about 90 minutes, or until the internal temperature is 165 degrees.
- When finished cooking, let rest for 20 minutes before serving.

- 1/2 Tbs Salt
