This dense and moist plum pound cake is made with simple ingredients and comes together easily. This not too sweet dessert is the perfect treat!
The plums in this pound cake are the perfect addition of sweetness and texture. Plums aren’t as juicy as other fruits which is nice, they don’t make the cake soggy.
This is good plain or topped with homemade whipped cream. I love to serve this for parties, family gatherings, and holidays. It’s always a crowd pleaser!
Ingredients
- Black Plums
- Flour
- Sugar
- Butter
- Eggs
- Whole Milk
- Baking Powder
- Vanilla Extract
Instructions
- Preheat oven to 350 degrees.
- In small mixing bowl, add your eggs and yolks. Add half of the milk and the vanilla. Whisk until well combined and set aside.
- In your stand mixer bowl, add the flour and baking powder. Whisk until well combined.
- Add the sugar. Whisk is into the flour and baking powder until well combined.
- Switch your stand mixer attachment to the beater. Add the butter. Mix on medium low speed until just combined.
- Add the rest of the milk. Mix on medium speed for 2 minutes. Mixture will come together like a dough and pull away from the sides of the mixing bowl. The dough mixture will also lighten in color.
- Add in the add mixture in 2 increments, scraping the bowl after each addition. On low speed, mix until just combined. Batter will look like cake batter.
- Get a 9×12 bread pan. Grease is with butter or nonstick spray. Pour half of the batter into the prepared pan and smooth to an even layer.
- Wash and dry the plums. Cut the plums in half and remove the pits. Cut each half into 4 sections.
- Lay half of the plum sections on the batter equally spread out.
- Pour the rest of the batter over top. Smooth to an even layer. Add the rest of the plum sections and lightly press them into the batter.
- Bake for 75 minutes or until a toothpick stuck into the middle of the cake comes out clean.
- Once finished baking, let rest in the pan for 5 minutes. Then flip the cake out of the pan onto a cooling rack. Let cool all the way before storing in an airtight container or serve while warm.
