There is no better way to have delicious home cooked meals at home for the week than by cooking a whole chicken. You can turn this into so many different meals you can feed multiple people multiple meals from just one bird.
The first meal we like to just eat the chicken plain because the skin is all crispy and it’s just so good as is. The next day I like to turn it into something else. I always make these Green Chili Chicken Enchiladas. You could make chicken pot pie, chicken tacos, you name it!
The seasoning on this pairs well with so many other flavors it won’t clash when introduced into other recipes.
I find whole chickens to be the cheapest meat you can buy at the store. Groceries are so expensive these days so to find affordable meat options is a huge win. You get dark and white meat, and all the different cuts of the bird. Everyone is bound to enjoy it!
Ingredients
- Whole Chicken
- Lemon Juice
- Lemon Zest
- Pepper
- Salt
Instructions
- Preheat the grill to 350 degrees.
- Put the whole chicken on a sheet pan and spatchcock it.
- Put it dry with a paper towel.
- In a small mixing bowl, combine the lemon juice, zest, pepper and salt. Mix together.
- Using a basting brush, put the rub all over the chicken.
- Put the chicken on the grill bone side down.
- Cook for an hour and 45 minutes or until internal temperature is 165 degrees. Be sure to not overcook it or it will be dry.
- Remove from grill and let rest for 10 minutes before serving.

- Zest of 2 Lemons
- 1 Tsp Pepper
- 1 Tsp Salt
