These would make a great addition to your holiday baking list or for any occasion. They are so easy to make and with simple ingredients that most already have on hand. I like to make these when I don’t feel like baking but want something sweet.
This citrus flavored cookie is a nice alternative to all the common cookie flavors with its unique ingredients for a cookie dough. For this recipe the butter has to be to room temperature and the orange juice concentrate needs to be melted so you can achieve the correct consistency.
This recipe can be easily doubled. Make double and freeze half of them for later. They freeze really well!
Ingredients
- Vanilla Wafers
- Butter
- Powdered Sugar
- Orange Juice Concentrate
- Shredded Coconut
Instructions
- Using a food scale, weigh out 8 ounces of vanilla wafers. Put them in a large Zip Loc bag and crush them with a rolling pin or use a food processor. Pour them into a medium sized mixing bowl.
- Using the food scale, weigh out your powdered sugar and the orange juice concentrate. Add the room temperature butter, powdered sugar, and orange juice concentrate to the mixing bowl with the crushed vanilla wafers.
- Using a metal spoon, mix it all together well until it makes a dough. Dough will be slightly sticky.
- In a small bowl, put the shredded coconut in it. Scoop about 1 1/2 tablespoons of the dough and roll it into a ball. You want it to be about 1 inch in size. Roll all the dough into like sized balls and then roll them in the shredded coconut.
- Store them in the refrigerator in an airtight container or freeze.

These were so easy to make and were a good learning experience for me. I didn’t have orange juice concentrate so I used orange juice from a few leftover oranges I had. The flavor was probably off a little but still very tasty! I plan on making them again today but with Orange juice concentrate. Thanks for the crazy easy recipe!

I’m not a fan of coconut, would the recipe work if I eliminated the coconut?

Yes, they will still turn out! If you like nuts, you could roll them in finely chopped pecans instead as well.
