This is such a light, refreshing side dish that is a summertime favorite! It is quick to whip up and is great for potlucks, picnics, and barbecues.
We eat a ton of fruit in my house during the warmer months. My youngest could eat his weight in fruit if I let him so I always buy lots, so we have many different types on hand. In season fruit is always the best and I love combining it together to take it to the next level. This salad is so flavorful, and the pistachios add a great crunch factor and a slight touch of salt. Make sure you are using ripe fruit to make sure your fruit is nice and sweet.
You can substitute the fruits in this if you don’t have one on hand, but I can’t guarantee they will pair well with the pistachios. You could definitely substitute for a different kind of apple like a fuji or use regular kiwis for example. Nectarines would be a good substitute for the peaches.
The cool thing about this salad, other than the pistachios, we planted each of the fruits in our yard this spring. The fact that in a few years I can make this salad with all the fruit we grew ourselves is so cool! I can’t wait for that day.

- Sun Gold Kiwis
- Gala Apples
- Blueberries
- Peaches
- Pistachios
Instructions
- Wash and dry the fruit. Chop the kiwi, apples, peaches into small cubes. Add all the fruit to your serving bowl.
- Roughly chop the pistachios. Add them to the fruit and gently toss together.
- Serve or keep in the refrigerator.

- 1 C Blueberries
- 1/2 C Pistachios (salted and roasted)
