These carrot cookies with an orange glaze have the best soft texture. They are so good you can’t eat just one!
If you ever need a dessert that seems like that took a lot of time and effort, but you don’t have time for that, this is just the recipe! These are made with kitchen staple ingredients and less than an hour to make. Easily make dessert for 30 people for a small price tag.
These would be perfect for a birthday party, baby shower, wedding, holiday, seriously any occasion. You can double the recipe if you need more than 30 cookies.

Ingredients
- Carrots
- Sugar
- Flour
- Olive Oil
- Butter
- Baking Powder
- Salt
- Vanilla
- Powdered Sugar
- Orange Juice
Instructions
- Preheat the oven to 400 degrees. Line your baking sheets with parchment paper.
- Fill a small sauce pan halfway with water. Bring to a boil and add in one cup of carrots. Cook until fork tender. Strain and then crush them with the back of a fork.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add in the egg, olive oil, butter, vanilla, and the cooked carrots. Mix until well combined.
- Using a 1 1/2 tablespoon cookie scoop, scoop out 30 cookies worth onto your baking sheets.
- Bake for 12 minutes.
- Let the cookies rest on the baking sheets for about 10 minutes before transferring to a cooling rack. Let cool all the way before putting the glaze on them.
- Whisk together the powdered sugar and the orange juice to make the glaze. Drizzle it with a spoon over the cookies.
- Serve or store in an airtight container.
