This one pot turkey noodle soup is full of delicious flavor that the whole family will love and so easy to make!
Cooking a whole turkey makes a lot of meat at once, which is good and bad. There are only so many times you can eat a turkey sandwich before you just can’t stand the thought of eating another one. This turkey noodle soup is just the ticket.
I like to make a batch of this and then freeze the rest of the turkey meat for another time.
It is the perfect cold day food. It is filling, comforting, pairs wonderfully with some fresh bread, and it is good for you.
My favorite part about this recipe is it all cooks in one pot. As someone who doesn’t have a dishwasher in their house, I appreciate the small number of dishes that are made by this.
Ingredients
- Leftover Turkey
- Olive Oil
- Yellow Onion
- Celery
- Carrots
- Minced Garlic
- Salt
- Pepper
- Water
- Better Than Bouillion Roasted Chicken Base
- Egg Noodles
Instructions
- Chop up your leftover turkey into 1/2-inch chunks. Set aside.
- Chop the onion, celery, and carrot into 1/4 inch like size pieces. Add them to a large soup pot.
- Add the olive oil to the pot and cook over medium heat until the onions start to brown.
- Remove from the heat and add the minced garlic, salt, and pepper. Stir together.
- Add the water and Better than Bouillion roasted chicken base to the pot. Whisk over medium high heat until it comes to a boil and then reduce heat to medium to where it is still simmering.
- Add the egg noodles. Cook for about 7 minutes or until al dente.
- Turn heat to low and add the turkey. Let cook until the turkey is warmed through and then remove from the heat.
- Serve.
