These freezer breakfast burritos are a life saver! Make them on the weekend and you have a delicious meal ready for to enjoy in a matter of minutes! Convenance is everything these days, but it usually comes with a hefty price tag. These large burritos are way cheaper than anything you could buy plus the quality of these are unbeatable.
These keep for a long time, like 3 months in the freezer! So don’t worry if you don’t think you will eat them all within a short amount of time. This is also a great way to save these ingredients that are about to go bad. My potatoes tend to go bad on me quicker than I can get to them, so this is a great way to make sure I don’t waste them.
You could easily substitute most of the ingredients in this for similar items if you would prefer. Use bacon instead of sausage. Sweet potatoes instead of russets. Use any kind of shredded cheese. They are super versatile.
Try these with hot sauce, queso, or some salsa on top. They are good with all!
Ingredients
- Eggs
- Russet Potatoes
- Breakfast Sausage
- Salt
- Pepper
- Burrito Tortillas
- Shredded Cheese
Instructions
- Wash and dry the potatoes. Cube them into 1/4-inch pieces. Put them in a large skillet and toss with some avocado oil or vegetable oil. Cook over medium low heat until they get a nice golden-brown color on them. Sprinkle them with a teaspoon of salt after cooking them. Set aside.
- Brown the breakfast sausage until fully cooked. Drain the grease and set aside.
- Add the eggs to a skillet and along with a teaspoon of salt and pepper. Scramble them over medium heat. Set aside.
- Now to assemble the burritos. Lay out the eight tortillas. Divide the potatoes, sausage, eggs and cheese equally between them. Fold the tortillas up like a burrito. Wrap the burritos in foil. Put them in a Ziploc freezer bag. Store in the freezer until ready to eat.
- To heat the frozen burrito, unwrap it and microwave it for about 2 minutes and then air fry is at 375 for 4 minutes. This makes it to where the inside is hot, and the tortilla gets browned. Serve immediately.

- 12 Eggs
- 8 Tortillas (burrito sized)
- 1 1/2 C Shredded Cheese
- 2 Tsp Salt (divided)
- 1/2 Tsp Pepper
