My family is border line obsessed with snack foods. My kids wish they could eat a pancake sausage on a stick for breakfast every morning and then eat more premade freezer foods the rest of the day. That kind of stuff is expensive to buy! I can’t afford to buy that stuff all the time, plus I know it’s not good for you. That is why you make it yourself!
These taquitos are way better than the store-bought ones anyways. Simple ingredients used so you can feed these to your family guilt free!
These are great fresh out of the oven, leftover, or frozen to enjoy another time. If you plan on freezing them, make sure they are all the way cooled and then vacuum seal them. You can use a freezer Ziploc bag if you want as well. They will keep for many months in the freezer like this. When ready to eat, bake them or air fry them straight from the freezer. No need to unthaw them first. I love to save some back for another day when I don’t feel like cooking or don’t have time.
These truly are delicious all on their own, but my favorite way to enjoy them is dipped in some kind of sauce. I gravitate towards queso or salsa. Which sauce would you choose? I’ve made a list below of sauces that I know go great with these.

Ingredients
- Corn Tortillas
- Cooked Pork Roast
- Mexican Blend Shredded Cheese
- Taco Seasoning
- Refried Beans
Instructions
- Preheat the oven to 400 degrees and line a couple of baking sheets with foil.
- Finely chop 4 cups worth of cooked pork roast. Put that into a bowl.
- Add your shredded cheese and taco seasoning to the pork. Toss it all together.
- Lay out the tortillas on the foil, it is okay if they overlap some, and warm them up in the oven for 4 minutes.
- Take the warm tortillas and smear a line of refried beans towards one side of the tortilla. Put the pork mixture on top of the refried beans. Roll the tortilla up tightly and place seam down on the foil.
- Lightly spray the top of the tortilla with cooking spray. This will help crispy it.
- Bake for 15 minutes and then flip. Continue cooking for 5 more minutes.
- Let cool for a few minutes before serving or store in the refrigerator or freezer once completely cooled.

- 10 Ounces Refried Beans
- 3 Tsp Taco Seasoning
- 24 Corn Tortillas
