While my mother was here visiting us, we knew we wanted to can some things together. Strawberry season is starting so I thought price wise they would be the best item to try to preserve right now. Sure enough, we found one-pound packages for 75 cents apiece! Score! I don’t think I have ever found strawberries that cheap before. It was meant to be. We ended up getting 20 pounds worth.
We ended up canning 27 jars worth of strawberry pie filling and this strawberry sauce with strawberries to spare for the freezer. We are set for strawberry wise for the pantry this year!
This strawberry sauce was extremely easy and quick to make. From start to finish, you can have it done in less than an hour. Canning can tend to be a time-consuming process, but not this recipe!
This sauce is so flavorful and has the best texture. It’s sweet, but not too sweet. It has a hint of orange because of the amount of zest in it, so it’s not just strawberry flavored. There are so many things this would be good on, but I personally would try it on a New York cheesecake, in a breakfast parfait, on pancakes, waffles, French toast, angel food cake, or ice cream.

Ingredients
- Strawberries
- Unsweetened Apple Juice
- Orange Zest
- Granulated Sugar
- Corn Syrup
- Orange Juice
Instructions
- Prep all your jars, lids, and other canning items. This includes washing the jars, lids, and rings. Fill your canner with water. Set out a dish towel to set the finished jars on, canning tongs, and a plastic knife for debubbling.
- Thoroughly wash the strawberries. Remove the stems and discard them. Put the cleaned strawberries in a large stainless-steel pot along with the unsweetened apple juice and orange zest. Bring to a gentle boil over medium heat, using a potato masher, crush the strawberries. If you have a food processor, pulse the strawberries a few times to speed up the strawberry crushing process before adding them to the pot.
- While maintaining a gentle boil, add in the granulated sugar, stirring until completely dissolved. Then stir in the corn syrup and orange juice. Bring to a full rolling boil over high heat. Stir constantly. For 15 minutes continue to stir and maintain a hard boil.
- Ladle the finished sauce into your prepped jars, leaving a 1/4-inch headspace. Debubble and add more syrup if needed to get the proper headspace. Wipe the rims with a damp paper towel and then place on the lid and ring. Tighten the ring to fingertip tight.
- Place your jars in the canner. Cover with an inch of water over the jars. Place the lid on the canner and bring the water to a boil. Once boiling, process for 10 minutes.
- Remove the canner lid and wait 5 minutes before removing the jars. Remove the jars and place directly on the towel to cool completely. Do not touch them for 24 hours. Once cooled, remove the rings and wipe down the jars. Label the lid and write the date on it. Store in a cool, dark place. Any jars that didn’t seal, put the ring back on and store in the refrigerator and enjoy them first.

Notes
Properly sealed jars will be shelf stable for many years if stored in a cool, dark place.
