Enjoy this refreshing cowboy caviar by the cracker or spoonful. It’s filled with vegetables and beans and tossed in a homemade vinaigrette.

This last thing you want to do in the summer heat is to turn your oven on to cook. A colorful and flavorful dish made easily just by chopping and mixing fresh ingredients is the ticket to avoid that!
Put all your garden-fresh veggies to good use in this recipe. You can tweak the recipe, if need be, to fit to what you have readily available. You can use any color of bell pepper, spicy pepper, beans, tomatoes, and cheese. It’s easily customizable!
This is delicious right after you make it, but it is extra good the next day. It’s like the vinaigrette marinates into the beans and vegetables and it is so good.
My family loves to enjoy this on tortilla chips or Ritz crackers. Me personally, I like it just by the spoonful. You can’t go wrong either way though.
Make this for potlucks, barbecues, and family dinner night! It’s an adult crowd pleaser.
