It is hard to beat a homemade tortilla. Something about the way they smell when they are cooking and then eating one hot out of the pan is unbeatable.
You can make the best dishes with these tortillas. I’m thinking tacos, quesadillas, enchiladas, chimichangas, burritos, you name it! We had cooked a brisket that day as well, so we made brisket tacos and oh my gosh they were the best things I’ve ever ate. Highly recommend going that route.
If you’ve never made homemade tortillas before, no worries they are super easy to make! No fancy equipment needed, and they taste so much different than store bought ones. You can easily double this recipe if you need more than 8 tortillas at one time. You can even freeze the extras if you don’t think you’ll use them up in a couple days. They will keep for several months in the freezer. Just make sure to put a little piece of parchment paper between each tortilla so they don’t stick together.
Ingredients
- Flour
- Baking Powder
- Salt
- Vegetable Oil
- Hot Water
- Jalapenos
- Cheddar Cheese
Instructions
- Whisk together the flour, baking powder, and salt. Then add in the vegetable oil and hot water. Using your hands, combine the ingredients and then once it starts to turn into a dough, knead it for about 2 minutes. Cover and let rest the dough rest for 20 minutes.
- Very finely dice your jalapenos and rough chop the already shredded cheese to make the pieces even smaller. Once the dough is done resting, make a well in the dough and add the jalapenos and cheese. Knead them into the dough until they are evenly distributed throughout the dough.
- Divide the dough into 8 equal pieces. Lightly flour a clean surface and roll out each piece of dough into a very thin circle.
- Heat a pan over medium low heat. Once to temperature, put 1 rolled out piece of dough in the hot pan. Let it cook for about 2 minutes on each side. It should bubble and nice golden-brown spots on it. Repeat this step for each piece.
- Serve them fresh off the pan or let cool all the way and store in an airtight container.
