Fresh caught salmon is such a treat. Living in the South it’s hard to find unfortunately. We unexpectedly were gifted some from one of my husband’s tractor customers. Such a fun and generous gift! They went fishing in Washington recently and shipped their catch back home. About as fresh as it gets! You can really taste the quality difference between it and the stuff you buy at the store. It’s night and day difference. If you’ve never tried fresh seafood, I’d recommend trying to find some to try!
Seafood is a great option when you are low on time to get food on the table. It doesn’t take long to cook and it’s easy to cook. As long as you don’t overcook it, it will be delicious. Simple ingredients are great for fresh quality meat, so its flavor shines.
Salmon pairs wonderfully with rice, like this Rice Pilaf {with Peppers & Onions} that my mother-in-law always make. It’s easy to make and delicious!

Sally Lipori says
do you grease the sheet pan or rub any oil on the skin side?

I did not since it doesn’t stick to a properly cleaned grill and I don’t eat the skin. Hope this helps.
