These pumpkin oatmeal cream pies have a fun fall twist on a classic dessert. The spiced cookies with the cream cheese frosting filling makes for the perfect bite.
My husband’s favorite store-bought treat is the Little Debbie oatmeal cream pies. I’m always buying them for his lunches for work because I don’t bake cookies as often as I would like to. Hello busy season of life! To redeem myself though, I thought I’d try my hand at making his favorite dessert but fall inspired.
These turned out so good! The soft spiced cookie with the creamy filling was beyond tasty. Not only delicious but very easy and quick to make as well! Pumpkin everything is about to be in full swing, so be sure to add these to your fall baking list!

Ingredients
- Butter
- Granulated Sugar
- Brown Sugar
- Egg
- Quick Oats
- Flour
- Baking Soda
- Pumpkin Puree
- Salt
- Pumpkin Pie Spice
- Vanilla Extract
- Cream Cheese
- Powdered Sugar
Instructions
- Preheat the oven to 350 degrees. Set out a couple baking sheets lined with parchment paper.
- In a medium sized mixing bowl, add your pumpkin puree, egg, and butter. Whisk together well.
- In a separate mixing bowl, whisk together the granulated sugar, brown sugar, quick oats, flour, baking soda, salt, and pumpkin pie spice. Add to the wet ingredients and stir together until just combined.
- Using a 1 tablespoon cookie scoop, divide the batter between the two baking sheets, 12 cookies each. Bake for 12-14 minutes, until the edges are just browned.
- Let rest of the baking sheet for about 5 minutes before transferring to a cooling rack.
- While the cookies are cooling, make the filling. Using a stand mixer or hand mixer, you are going to want to beat together the vanilla extract, butter, cream cheese, and powdered sugar until smooth and creamy.
- Once the cookies are completely cooled, put a thick layer of the frosting on the bottom side of one cookie. Take another cookie and place the bottom of it on the other side to make a cookie sandwich. You will end up with 12 oatmeal cream pies.
- Store in the refrigerator in an airtight container because of the cream cheese frosting.
