This winter spinach salad is pomegranates, craisins, spinach, green onion, and bacon bits tossed in the most delicious homemade salad dressing. It is one to remember!
This is my favorite salad! The flavors are incredible, and the homemade dressing takes it to the next level. It is super easy to make and perfect side for any meal.
You will have leftover dressing but to me that is the benefit of this recipe. It is so darn good and goes well on many different types of salads. It keeps well in the fridge, so you don’t have to use it up immediately.
I made my own bacon bits because I think they are so much better than the ones you buy in the bag at the store, but if you want to save time and effort, I would just use those. It is still really good with using those. Just skip that step in the recipe.
Ingredients
- Spinach
- Craisins
- Green Onion
- Pomegranate
- Bacon Bits
- Sugar
- Apple Cider Vinegar
- Lemon Juice
- Honey
- Dry Mustard
- Paprika
- Celery Salt
- Vegetable Oil
Instructions
- In a large salad bowl, add the spinach, craisins, pomegranate.
- If you are making your own bacon bits, bake the bacon at 400 degrees until nice and crispy, about 15 minutes. Once it has cooled, using kitchen shears or a knife cut into small pieces. Add to the salad bowl.
- Using kitchen shears, cut the green onion into 1/8-inch-thick pieces. Add to the salad bowl.
- Now make the dressing. In a microwave safe jar, add the sugar, apple cider vinegar, lemon juice, honey, dry mustard, paprika, and celery salt. Microwave for 30 seconds. Stir well until the sugar dissolves. Let cool before adding the vegetable oil.
- When ready to serve, shake the dressing really well and drizzle over the salad.
- Store the salad and dressing in the refrigerator in airtight containers.

Notes
Dressing with keep for 4 weeks in the refrigerator.
Salad will keep for 5 days.

This Salad was absolutely amazing!! I love making new and interesting salads, and this has been one of my favorites! I didnt have celery salt, so I used garlic salt instead for the dressing. It was super delicious!!
