Chewy, sugar-coated cookies that are spice filled is what makes these molasses cookies. These are the most satisfying sweet treat.
I have been craving a good molasses cookie for a couple weeks now and I knew I wanted them to be chewy, big in size, and lots of spice to them. These are just that!
They are easy to make but make sure you don’t skip the chilling step of this recipe. I cannot guarantee they will turn out if you skip that part. That’s what helps give them that nice chewy texture. And be sure to not over bake them or they will be crunchy all the way through. They are still yummy crunchy, but better when chewy.

Kitchen Tools Needed

- 2 TBSP Cookie Scoop

Ingredients
- Salted Butter
- Granulated Sugar
- Brown Sugar
- Egg
- Molasses
- Flour
- Baking Soda
- Ground Ginger
- Ground Cloves
- Ground Cinnamon
Instructions
- Using a stand mixer, using the flat beater attachment, mix together the butter and 1/2 cup of granulated sugar and the brown sugar. Mix for a couple minutes.
- Add in the egg and molasses. Mix until incorporated.
- Add in the flour, baking soda, ground ginger, ground cloves, and ground cinnamon. Mix until just combined.
- Cover the mixing bowl with plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 375 degrees. Line two baking sheets with parchment paper. Portion out the dough using a 2-tablespoon sized cookie scoop.
- Roll each piece of dough into a ball. Pour a 1/4 cup of granulated sugar on a plate. Roll the round dough pieces in the sugar until they are fully coated. Space out the cookie dough balls on the baking sheets. They will spread a lot while they cook.
- Bake for 14 minutes.
- After 5 minutes, transfer the cookies to the cooling rack. Serve warm or let cool all the way before storing in an airtight container.
