Homemade pizza and Mexican foods are my go-to’s for a large amount of the meals I make each week. Combining the two makes for the best supper ever! Taco pizza is very common, which I have an amazing recipe for that you should check out, but street corn pizza? Where has this been all my life? It is amazing!
This is incredibly easy to make. Use premade dough, leave off the cilantro if you don’t like it, use parsley instead, if you don’t have fajita seasoning use paprika, use fresh or bottled lime juice. It’s seriously such a forgiving and simple recipe, you can’t screw it up.
This is meatless, so it will appeal to everyone. A great food to prepare for when you plan to have friends or family over.
The leftovers are just as tasty too! Make sure to air fry the leftover pieces. It really makes it taste like fresh again. Literally just takes a couple minutes.

- Corn
- Salted Butter
- Cumin
- Fajita Seasoning
- Lime Juice
- Pizza Dough
- Sour Cream
- Mayonnaise
- Cilantro
Instructions
- Preheat the oven to 400 degrees.
- Melt the butter in a skillet over medium low heat. Add in the corn and sauté until the corn just starts to brown. Stir in the cumin, fajita seasoning, and lime juice. Remove from the heat and set aside to cool.
- Now prepare your pizza dough. Roll it out into a 12 by 15-inch square on your baking sheet.
- Mix together sour cream and mayonnaise. Spread that out in an even layer on the dough.
- Sprinkle the corn all over the sauce layer. Then sprinkle the cotija cheese on top of that.
- Bake for 15 minutes. Let rest for 5 minutes before topping it with the chopped cilantro and slicing.

- 2 C Corn (frozen or fresh)
- 1 Tbsp Salted Butter
- 1 Tsp Cumin
- 1/2 Tsp Fajita Seasoning
- 1/2 Tsp Lime Juice
- 1/4 C Sour Cream
- 1/4 C Mayonnaise
- 1/3 C Cotija Cheese
- Cilantro

Notes
You can use homemade pizza dough or store bought.
Reheat the leftovers in the air fryer at 400 degrees for a couple minutes.
